The bak­ing mix "Narew”

can be rat­ed among health – pro­mot­ing ba­king com­po­nents be­cause thanks to pro­cessed ama­ranth seeds it ac­quires quite a num­ber of bio­ac­tive sub­stances ben­e­fi­cial to hu­man health.
A­ma­ranth seeds are rich­er in pro­tein, lipids, fiber and min­er­al com­po­nents in com­par­i­son with oth­er tra­di­tion­al grains Pro­tein, which is found in ama­ranth and its prod­ucts, is char­ac­ter­ized by rel­a­tive­ly high con­tent of exo­ge­nous amino acids, such as: ly­sine, me­thio­n­ine, cys­tine and cys­teine.
A­ma­ranth seeds and oth­er ama­ranth prod­ucts are rich in vi­ta­mins, es­pe­cial­ly the vi­ta­mins of group B, such as:

ri­boflavin (B2)

the main spring of our life.

pyri­dox­ine (B6)

the won­der of the na­ture.

bi­otin (H)

vi­ta­min for the healthy hair and skin.

­niacin (B3)

­makes the nerves "feel hap­py”.

­folic acid

a guar­an­tee of good mood.

i­nos­i­tol

re­lieves from wor­ries and fears.
Ama­ranth con­tains a few times more of valu­able min­er­al com­po-­nents than oth­er grains. They are as fol­lows: phos­pho­rus, po-­tas­si­um, cal­ci­um, mag­ne­sium and iron.
"Narew” mix con­tains 7% of vi­tal di­etary lipids which con­tain more than 31% of ole­ic acid (C 18:1) 39% of linole­ic acid (C 18:2) and about 0,7% of ali­nolenic acid (C 18:3).
An­oth­er great ad­van­tage of the lipoid frac­tion of ama­ranth is high con­tent of squa­lene, a health-pro­mot­ing sub­stance. The triter­pin hy­dro­car­bon con-­tains six dou­ble bonds, which en­sures great an­tiox­i­dant fea­tures.
Squa­lene is a nat­u­ral sub­stance which pro­tects us from the ne­ga­tive in­flu­ence of en­vi­ron­men­tal fac­tors, in­clud­ing ul­tra­-vi­o­let ra­dia­tion with the wave­length of 290–315 mm. It helps our or­gan­ism to get fid of dif­fer­ent kinds of non-po­lar xeno­bi­otics such as: pes­ti­cides, tox­ins, strych­nine etc.
­To­co­pherols and to­cotrienols be­long to valu­able com­po­nents of lipoid frac­tion of ama­ranth and its prod­ucts to­geth­er with phy­to­ste­rols such as, for in­stance:: spinos­terol, d-7 stig­mas­terol and d-7 er­gos­terol bio­ac­tive bonds with an­ti-­mu­ta­genic and an­ti-­can­cero­genic char­ac­ter­is­tics re­spon­si­ble for bio­syn­the­sis of vi­ta­min D and some hor­mones.
