The baking mix "Narew”
can be rated among health – promoting baking components because thanks to processed amaranth seeds it acquires quite a number of bioactive substances beneficial to human health.
Amaranth seeds are richer in protein, lipids, fiber and mineral components in comparison with other traditional grains Protein, which is found in amaranth and its products, is characterized by relatively high content of exogenous amino acids, such as: lysine, methionine, cystine and cysteine.
Amaranth seeds and other amaranth products are rich in vitamins, especially the vitamins of group B, such as:
riboflavin (B2)
the main spring of our life.
pyridoxine (B6)
the wonder of the nature.
biotin (H)
vitamin for the healthy hair and skin.
niacin (B3)
makes the nerves "feel happy”.
folic acid
a guarantee of good mood.
inositol
relieves from worries and fears.
Amaranth contains a few times more of valuable mineral compo-nents than other grains. They are as follows: phosphorus, po-tassium, calcium, magnesium and iron.
"Narew” mix contains 7% of vital dietary lipids which contain more than 31% of oleic acid (C 18:1) 39% of linoleic acid (C 18:2) and about 0,7% of alinolenic acid (C 18:3).
Another great advantage of the lipoid fraction of amaranth is high content of squalene, a health-promoting substance.
The triterpin hydrocarbon con-tains six double bonds, which ensures great antioxidant features.
Squalene is a natural substance which protects us from the negative influence of environmental factors, including ultra-violet radiation with the wavelength of 290–315 mm. It helps our organism to get fid of different kinds of non-polar xenobiotics such as: pesticides, toxins, strychnine etc.
Tocopherols and tocotrienols belong to valuable components of lipoid fraction of amaranth and its products together with phytosterols such as, for instance:: spinosterol, d-7 stigmasterol and d-7 ergosterol bioactive bonds with anti-mutagenic and anti-cancerogenic characteristics responsible for biosynthesis of vitamin D and some hormones.
